  Library Journal Review

Despite the title, Snyder's (One Pan, Two Plates: More Than 70 Complete Weeknight Meals for Two) latest book actually focuses on weeknight meals for a flexitarian diet. The author uses her 30 years of experience as a caterer, baker, cooking instructor, and food writer to showcase dishes appealing to those looking to reduce their meat intake. The recipes feature a variety of proteins (e.g., beans, nuts, and tofu) in easy-to-make meals such as black bean tacos and General Tso's tofu. Also highlighted are a number of enticing pastas, soups, and pizzas, leading to a reliance on eggs and dairy as protein for many of the recipes, all of which boast easily acquired ingredients. An international flair among the assorted dishes (moussaka, latkes, chili, and tabbouleh) will inspire those partaking in a flexitarian regimen. VERDICT With its approachable recipes, this book will attract home cooks new to vegetarian diets or those wanting to try "meatless Mondays."-Ginny Wolter, Toledo-Lucas Cty. P.L. © Copyright 2016. More and more people are making the shift to a vegetable-centric diet. Yet, in a two-person household it can be challenging to find quick, easy, and satisfying recipes to cook up at the end of a busy workday (especially without leftovers). This follow-up to the successfulOne Pan, Two Plates provides 70 perfectly sized vegetarian entrées--think Butternut Risotto, Gnocchi with Wild Mushrooms and Edamame, and Eggplant Rollatini--all requiring only one pan and one hour or less to prepare. With beverage pairings for each recipe and an "Extra hungry?" feature for heartier appetites, each dish is one that home cooks will make again and again.
